I picked up a large package of ground beef from costco a while ago and portioned it out and froze it. now I have a recipe that calls for 1 pound.

how do I figure out a pound of ground beef without a scale? what does one pound look like?

suggestion: walk into a grocery store with your complete chunk of ground beef, use their grocery scale to see how much the whole thing weighs and go home to do the math.

Well according to the interwebs, ground beef has a density around 950 kg/m^3 which is = 59.3065625 lbs/ft^3 means that 1 pound of beef is roughly 1/59 cubic feet or a little more than 2 cups

I'm sure you've solved your pound of beef problem by now, but for future reference...

If you have a regular scale that you use to weigh yourself on, weigh yourself holding an empty bowl. Make note of the weight (remember that at least 30 lbs are the bowl, I'm sure). Weigh yourself holding the same bowl with some of the meat in it. Add and remove meat until you're about a pound heavier.

And in the future, when you buy bulk ground meat, freeze it in packages about a pound each (since most recipes call for 1 or 2 lbs of meat). Don't you remember having to do this for mom whenever it was grocery day? I sure do. She would buy the best ground beef and some of the cheapest, then do 1/2 lb of each in a ziploc to freeze. I remember asking her how I was supposed to know how much a pound is and she said "Misty, just estimate it. It doesn't have to be perfect.". I'm such a geek. :-)

Too late, I'm sure, but:
Make a patty that looks about like a quarter pounder patty.
Repeat four times.
Most recipes calling for a pound of beef won't be ruined by a few ounces one way or the other.
